Tomato Fried Rice

Ingredients:

- 2 cups cooked rice
- 2 eggs
- 1 tomato, diced
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper

Instructions:

1. Heat a large skillet over medium heat.

2. Add the eggs and scramble until cooked through. Remove from the skillet and set aside.

3. Add the onion and garlic to the skillet and cook until softened, about 5 minutes.

4. Add the tomato and cook for another 5 minutes.

5. Add the cooked rice, salt, and pepper and stir to combine.

6. Add the scrambled eggs back to the skillet and stir to combine.

7. Cook for another 5 minutes, stirring occasionally, until the rice is heated through.

8. Serve warm. Enjoy!
