Tomato Fried Rice
Ingredients:
- 2 cups cooked rice
- 2 eggs
- 1 tomato, diced
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
Instructions:
1. Heat a large skillet over medium-high heat and add 1 tablespoon of oil.
2. Add the onion and garlic and cook until the onion is softened, about 3 minutes.
3. Add the tomato and cook for another 2 minutes.
4. Add the cooked rice and stir to combine.
5. Push the rice to one side of the pan and crack the eggs into the other side.
6. Scramble the eggs and mix them into the rice.
7. Season with salt and pepper and cook for another 2 minutes.
8. Serve warm. Enjoy!
