Cheesy Tomato Pasta and Rice
Ingredients:
-1 cup uncooked white rice
-2 cups uncooked pasta
-2 eggs
-1/2 cup shredded cheese
-1/2 onion, diced
-1/2 teaspoon salt
-1 tomato, diced
-2 cloves garlic, minced
-1/4 teaspoon black pepper
Instructions:
1. Bring a large pot of salted water to a boil.
2. Add the pasta and cook until al dente, about 8 minutes.
3. Drain the pasta and set aside.
4. In a separate pot, bring 2 cups of water to a boil.
5. Add the rice and cook until tender, about 20 minutes.
6. Drain the rice and set aside.
7. In a large skillet, heat the oil over medium-high heat.
8. Add the onions and cook until softened, about 5 minutes.
9. Add the garlic and cook for 1 minute.
10. Add the tomato and cook for 2 minutes.
11. Add the cooked pasta and rice and stir to combine.
12. Add the eggs and stir to combine.
13. Add the cheese and stir to combine.
14. Add the salt and pepper and stir to combine.
15. Cook until the eggs are cooked through and the cheese is melted, about 5 minutes.
16. Serve hot. Enjoy!
