Lemon Chicken with Carrots and Walnuts

Ingredients:

- 2 large carrots, peeled and diced
- 1 bell pepper, diced
- 1/2 cup walnuts, chopped
- 2 chicken breasts, cut into cubes
- Juice of 1 lemon
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375 degrees F.

2. In a large bowl, combine carrots, bell pepper, walnuts, chicken, lemon juice, salt and pepper. Mix until ingredients are evenly distributed.

3. Spread the mixture onto a baking sheet and bake for 25 minutes, stirring occasionally.

4. Serve hot and enjoy!
