Chile-Spiced Chicken with Roasted Tomatoes
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large tomatoes, cut into wedges
Instructions:
1. Preheat oven to 400°F.
2. Place chicken breasts in a baking dish.
3. In a small bowl, combine olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.
4. Brush the mixture over the chicken breasts.
5. Arrange the tomato wedges around the chicken.
6. Bake for 20-25 minutes, or until chicken is cooked through and tomatoes are lightly browned.
7. Serve hot. Enjoy!
