Veggie Fried Rice
Ingredients:
- 2 cups cooked white rice
- 1 large potato, peeled and diced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
- 1/4 cup frozen peas
- 2 tablespoons soy sauce
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the diced potato and cook until lightly browned, about 5 minutes.
3. Add the onion and bell pepper and cook until softened, about 5 minutes.
4. Add the cooked rice and frozen peas and stir to combine.
5. Season with salt and pepper, then stir in the soy sauce.
6. Cook for an additional 5 minutes, stirring occasionally, until the rice is hot and the vegetables are cooked through.
7. Serve hot. Enjoy!
