One-Pot Chicken and Rice

Ingredients:

-2 cups uncooked white rice

-2 cups chicken broth
-1 cup diced tomatoes
-1/2 cup diced onion
-1/2 cup uncooked pasta
-1 teaspoon salt
-1/2 teaspoon black pepper
-1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

Instructions:

1. In a large pot or Dutch oven, combine the rice, chicken broth, tomatoes, onion, pasta, salt, and pepper.

2. Bring the mixture to a boil over medium-high heat, stirring occasionally.

3. Once boiling, reduce the heat to low and add the chicken cubes.

4. Cover the pot and simmer for 20 minutes, or until the rice and pasta are cooked through.

5. Serve hot. Enjoy!
