Chicken Fried Rice

Ingredients:

- 2 tablespoons vegetable oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups cooked white rice
- 2 cups cooked, diced chicken
- 2 eggs, lightly beaten
- 1/2 cup diced tomato
- Salt and pepper, to taste

Instructions:

1. Heat the oil in a large skillet over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.

2. Add the cooked rice and chicken to the skillet and stir to combine. Cook for 5 minutes, stirring occasionally.

3. Push the rice and chicken to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until they are cooked through, about 2 minutes.

4. Add the diced tomato to the skillet and stir to combine. Season with salt and pepper, to taste.

5. Cook for an additional 5 minutes, stirring occasionally, until the rice is heated through and the vegetables are tender.

6. Serve hot. Enjoy!
