Cheesy Chicken and Veggie Skillet

Ingredients:
- 2 tablespoons olive oil
- 1 large onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 boneless, skinless chicken breasts, cut into cubes
- 1 large tomato, diced
- 1 cup shredded cheese
- Salt and pepper, to taste

Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the onion and bell pepper and cook until softened, about 5 minutes.
3. Add the garlic and cook for an additional minute.
4. Add the chicken and cook until browned and cooked through, about 8 minutes.
5. Add the tomato and cook for an additional 2 minutes.
6. Reduce the heat to low and stir in the cheese until melted.
7. Season with salt and pepper, to taste.
8. Serve hot. Enjoy!
