Fried Rice with Chicken
Ingredients:
- 2 cups cooked white rice
- 2 boneless, skinless chicken breasts, cut into cubes
- 2 eggs, lightly beaten
- 1 onion, diced
- 1 tomato, diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions:
1. Heat a large skillet over medium-high heat. Add the chicken cubes and cook until lightly browned, about 5 minutes.
2. Add the onion and tomato to the skillet and cook until softened, about 3 minutes.
3. Push the chicken and vegetables to one side of the skillet and add the beaten eggs to the other side. Scramble the eggs until cooked through, about 2 minutes.
4. Add the cooked rice to the skillet and stir to combine. Season with salt and pepper.
5. Cook, stirring occasionally, until the rice is heated through and lightly browned, about 5 minutes.
6. Serve hot. Enjoy!
