Make Persian Rice with Potatoes
Recipe Name: Persian Rice with Potatoes
Ingredients:
- 2 cups Basmati rice
- 2 large potatoes, peeled and thinly sliced
- 1 onion, thinly sliced
- 2 tablespoons tomato paste
- Salt and pepper to taste
- 4 cups water
- 4 tablespoons vegetable oil
Instructions:
1. Rinse the Basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
2. In a large pot, heat 2 tablespoons of vegetable oil over medium heat. Add the sliced onions and sauté until they are soft and translucent.
3. Add the sliced potatoes to the pot and cook until they are slightly golden brown.
4. In a separate bowl, mix the tomato paste with 1 cup of water until well combined. Pour this mixture over the potatoes and onions.
5. Season with salt and pepper, then add the drained rice to the pot. Gently mix everything together.
6. Pour in the remaining 3 cups of water and bring the mixture to a boil. Reduce the heat to low, cover the pot with a lid, and let it simmer for 30-40 minutes or until the rice is cooked through.
7. In a separate pan, heat the remaining 2 tablespoons of vegetable oil. Once hot, pour the oil over the rice in the pot to create a crispy bottom layer, known as tahdig.
8. Carefully flip the pot onto a serving platter to reveal the crispy tahdig layer on top.
9. Serve the Persian rice with potatoes hot and enjoy!
