Pesto Chicken and Potato Bake
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup prepared pesto
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh basil, chopped
- 2 tablespoons fresh oregano, chopped
- 2 tablespoons fresh thyme, chopped
- 2 pounds small potatoes, quartered
- 2 cups cherry tomatoes, halved
- Salt and pepper, to taste
Instructions:
1. Preheat oven to 375°F.
2. In a small bowl, mix together pesto, olive oil, garlic, parsley, basil, oregano, and thyme.
3. Place chicken breasts in a 9x13 inch baking dish. Spread pesto mixture over chicken.
4. Arrange potatoes and tomatoes around chicken. Sprinkle with salt and pepper.
5. Bake for 25-30 minutes, or until chicken is cooked through and potatoes are tender.
6. Serve warm. Enjoy!
