Pesto Potato and Cauliflower Bake

Ingredients:

-4 medium potatoes, peeled and cut into cubes

-1 head of cauliflower, cut into florets

-1/2 cup of prepared pesto

-1/4 cup of olive oil

-Salt and pepper to taste

Instructions:

1. Preheat oven to 400 degrees Fahrenheit.

2. Place the cubed potatoes and cauliflower florets into a large bowl.

3. Drizzle the olive oil over the vegetables and season with salt and pepper.

4. Toss the vegetables until they are evenly coated in oil and seasoning.

5. Spread the vegetables out onto a baking sheet.

6. Bake in the preheated oven for 25 minutes, stirring halfway through.

7. Remove from the oven and transfer the vegetables to a large bowl.

8. Add the pesto and stir until the vegetables are evenly coated.

9. Transfer the vegetables back to the baking sheet and bake for an additional 10 minutes.

10. Serve warm. Enjoy!
