Pollo al Ajillo

Ingredients:

- 2 lbs of chicken, cut into cubes
- 2 cloves of garlic, minced
- 1 onion, diced
- 1 red bell pepper, diced
- 2 tablespoons of olive oil
- 1 teaspoon of paprika
- 1 teaspoon of oregano
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the chicken cubes and cook until lightly browned, about 5 minutes.

3. Add the garlic, onion, and bell pepper and cook until the vegetables are softened, about 5 minutes.

4. Add the paprika, oregano, salt, and pepper and stir to combine.

5. Reduce the heat to low and cover the skillet. Simmer for 15 minutes, stirring occasionally.

6. Serve over rice or with a side of your favorite vegetables. Enjoy!
