Recipe: Pineapple Chicken
Ingredients:
- 1 lb chicken breast, cut into bite-sized pieces
- 1 cup pineapple chunks
- 1 red bell pepper, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon cornstarch
- 1/4 cup water
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Cooked rice, for serving
Instructions:
1. In a small bowl, mix together soy sauce, honey, cornstarch, and water. Set aside.
2. Heat vegetable oil in a large skillet over medium-high heat.
3. Add chicken pieces to the skillet and season with salt and pepper. Cook until browned on all sides, about 5-7 minutes.
4. Add garlic, onion, and red bell pepper to the skillet. Cook for an additional 2-3 minutes until vegetables are slightly softened.
5. Pour the soy sauce mixture over the chicken and vegetables. Stir well to combine.
6. Add pineapple chunks to the skillet and stir gently.
7. Let the mixture simmer for 5-7 minutes, or until the sauce has thickened and chicken is cooked through.
8. Serve the pineapple chicken over cooked rice and enjoy!
