Pineapple Chile Fish Rice Bowl
Ingredients:
-1 cup cooked white rice
-1/2 lb. fish fillets
-1/2 cup diced pineapple
-2 tablespoons chopped parsley
-1/2 teaspoon Chile powder
-1/2 cup diced tomato
-1/2 cup diced avocado
Instructions:
1. Preheat oven to 375 degrees F.
2. Place fish fillets on a baking sheet lined with parchment paper. Sprinkle with Chile powder and bake for 15-20 minutes, or until fish is cooked through.
3. Meanwhile, cook the rice according to the package instructions.
4. In a large bowl, combine the cooked rice, pineapple, parsley, tomato, and avocado.
5. Once the fish is cooked, flake it into the bowl and mix everything together.
6. Serve the Pineapple Chile Fish Rice Bowl warm. Enjoy!
