Pineapple Fried Rice

Ingredients:

- 2 cups cooked white rice
- 1/2 cup all-purpose flour
- 2 boneless, skinless chicken breasts, cut into small cubes
- 1 red bell pepper, diced
- 1 onion, diced
- 1/2 cup diced pineapple
- 2 eggs, lightly beaten
- 2 tablespoons vegetable oil
- Salt and pepper, to taste

Instructions:

1. Heat the oil in a large skillet over medium-high heat.

2. Add the chicken and cook until lightly browned, about 5 minutes.

3. Add the bell pepper, onion, and pineapple and cook for an additional 3 minutes.

4. Add the cooked rice and stir to combine.

5. Sprinkle the flour over the top and stir to combine.

6. Push the ingredients to the side of the skillet and pour the eggs in the center. Stir to scramble the eggs and combine with the other ingredients.

7. Season with salt and pepper, to taste.

8. Serve hot. Enjoy!
