Grilled Eggplant and Chicken
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 large eggplant, sliced into 1/2-inch rounds
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Preheat grill to medium-high heat.
2. In a large bowl, combine chicken, eggplant, garlic, olive oil, salt, and pepper. Toss to coat.
3. Place chicken and eggplant on the grill. Grill for 6-8 minutes per side, or until chicken is cooked through and eggplant is tender.
4. Serve hot. Enjoy!
