Plantain and Chicken Stir Fry
Ingredients:
-1 plantain, peeled and sliced into cubes
-1 green pepper, diced
-1 carrot, diced
-2 tomatoes, diced
-1 teaspoon of pepper
-1 teaspoon of salt
-1 pound of chicken, cut into cubes
-2 tablespoons of olive oil
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken cubes and cook until they are lightly browned and cooked through, about 5 minutes.
3. Add the plantain cubes, green pepper, carrot, and tomatoes to the skillet and cook for another 5 minutes.
4. Season with the pepper and salt.
5. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are tender.
6. Serve hot. Enjoy!
