Plantain and Chicken Stir-Fry

Ingredients:

-1 plantain, peeled and sliced into cubes
-1 green pepper, diced
-1 carrot, diced
-2 tomatoes, diced
-1 teaspoon of pepper
-1 teaspoon of salt
-1 cup of cubed chicken

Instructions:

1. Heat a large skillet over medium-high heat and add a tablespoon of oil.

2. Add the plantain cubes and cook for 3-4 minutes, stirring occasionally.

3. Add the green pepper, carrot, tomatoes, pepper, and salt. Cook for another 3-4 minutes, stirring occasionally.

4. Add the cubed chicken and cook for 5-7 minutes, stirring occasionally.

5. Serve hot and enjoy!
