Make Polish Pierogi

Recipe Name: Polish Pierogi

Ingredients:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup sour cream
- 1/4 cup butter, melted
- 1/2 cup warm water
- 1 cup mashed potatoes
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
- 1/2 onion, diced and sautéed (optional)
- Sour cream and chives for serving

Instructions:
1. In a large bowl, mix together the flour and salt. Make a well in the center and add the egg, sour cream, melted butter, and warm water. Mix until a dough forms.
2. Knead the dough on a floured surface for about 5 minutes, until smooth. Cover with a damp cloth and let it rest for 30 minutes.
3. In a separate bowl, mix together the mashed potatoes, cheddar cheese, salt, pepper, and sautéed onions if using.
4. Roll out the dough on a floured surface to about 1/8 inch thickness. Use a round cutter to cut out circles of dough.
5. Place a spoonful of the potato filling in the center of each circle. Fold the dough over the filling and pinch the edges to seal.
6. Bring a large pot of salted water to a boil. Cook the pierogi in batches for about 3-4 minutes, or until they float to the surface.
7. Remove the pierogi with a slotted spoon and drain on a paper towel.
8. Serve the pierogi hot with a dollop of sour cream and a sprinkle of chives.
