Pollo con Arroz y Setas

Ingredients:

- 2 boneless, skinless chicken breasts
- 2 cups of long grain white rice
- 2 tablespoons of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 cups of sliced mushrooms
- 1 cup of chicken broth
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- Salt and pepper, to taste
- 1/2 cup of grated cheese

Instructions:

1. Preheat oven to 375 degrees F.

2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 5 minutes per side, or until golden brown. Remove from the skillet and set aside.

3. Add the diced onion and garlic to the skillet and cook for 2 minutes, stirring often.

4. Add the mushrooms and cook for an additional 3 minutes, stirring often.

5. Add the chicken broth, oregano, thyme, salt, and pepper. Bring to a boil.

6. Add the rice and stir to combine.

7. Place the chicken breasts back into the skillet. Cover and transfer to the preheated oven. Bake for 25 minutes.

8. Remove from the oven and sprinkle with grated cheese. Cover and let sit for 5 minutes.

9. Serve the chicken and rice with the mushrooms and cheese. Enjoy!
