Pollo con Bananas y Canela

Ingredients:

- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 ripe bananas, peeled and sliced
- 1/4 cup brown sugar
- 1/4 cup water
- 2 eggs, beaten

Instructions:

1. Preheat oven to 350°F.

2. Heat olive oil in a large skillet over medium heat.

3. Season chicken breasts with cinnamon, nutmeg, and a pinch of salt and pepper. Add chicken to the skillet and cook for 5-7 minutes, flipping once, until cooked through.

4. Transfer chicken to a baking dish. Top with banana slices and sprinkle with brown sugar.

5. Pour water into the baking dish and cover with foil. Bake for 15 minutes.

6. Remove foil and pour beaten eggs over the chicken and bananas. Bake for an additional 10 minutes, or until eggs are cooked through.

7. Serve hot and enjoy!
