Pollo con Espinaca y Tomate
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1/2 cup diced onion
- 1/2 cup diced red bell pepper
- 2 cloves garlic, minced
- 2 cups fresh spinach
- 1/2 cup diced tomatoes
- 1/4 cup fresh cilantro, chopped
- 1/4 teaspoon ground cumin
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the chicken breasts and cook for 4-5 minutes per side, or until cooked through.
3. Remove the chicken from the skillet and set aside.
4. Add the onion, bell pepper, and garlic to the skillet and cook for 3-4 minutes, or until softened.
5. Add the spinach, tomatoes, cilantro, and cumin and cook for an additional 2-3 minutes.
6. Return the chicken to the skillet and season with salt and pepper, to taste.
7. Cook for an additional 2-3 minutes, or until the chicken is heated through.
8. Serve the chicken with the spinach and tomato mixture. Enjoy!
