Porcini Mushroom Risotto

Ingredients:

-1 cup risotto rice
-3 tablespoons butter
-2 tablespoons chopped fresh basil
-2 tablespoons lemon juice
-1/4 cup dried porcini mushrooms

Instructions:

1. In a medium saucepan, melt the butter over medium heat.

2. Add the risotto rice and stir to coat with the butter.

3. Toast the rice for a few minutes, stirring occasionally, until it is lightly golden.

4. Add the dried porcini mushrooms and stir to combine.

5. Pour in 4 cups of boiling water and stir.

6. Reduce the heat to low and simmer, stirring occasionally, for 20 minutes or until the rice is tender.

7. Add the basil and lemon juice and stir to combine.

8. Serve the risotto hot, topped with additional fresh basil if desired. Enjoy!
