Pork and Beet Stew
Ingredients:
-1 lb. pork, cut into cubes
-2 beets, peeled and cubed
-2 carrots, peeled and cubed
-1 onion, diced
-2 tablespoons vegetable oil
-2 tablespoons tomato paste
-1/2 head of cabbage, shredded
-2 potatoes, peeled and cubed
-3 cloves garlic, minced
Instructions:
1. Heat the oil in a large pot over medium heat.
2. Add the pork cubes and cook until lightly browned.
3. Add the onions, carrots, and garlic and cook for 3-4 minutes.
4. Add the beets, potatoes, and cabbage and cook for another 3-4 minutes.
5. Add the tomato paste and stir to combine.
6. Add enough water to cover the ingredients in the pot.
7. Bring to a boil, reduce heat to low, and simmer for 30 minutes or until the vegetables are tender.
8. Serve hot. Enjoy!
