Pork and Eggplant Stew
Ingredients:
-1 large eggplant, diced
-1 large sweet onion, diced
-2 large tomatoes, diced
-1 red pepper, diced
-1 lb pork, cubed
-2 tablespoons olive oil
-1 teaspoon garlic powder
-1 teaspoon onion powder
-1 teaspoon paprika
-1 teaspoon dried oregano
-1 teaspoon dried basil
-Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the pork cubes and cook until lightly browned, about 5 minutes.
3. Add the diced eggplant, onion, tomato, and red pepper. Cook for 5 minutes, stirring occasionally.
4. Add the garlic powder, onion powder, paprika, oregano, and basil. Stir to combine.
5. Reduce the heat to low and cover the pot. Simmer for 20 minutes, stirring occasionally.
6. Taste and adjust seasoning with salt and pepper as needed.
7. Serve hot. Enjoy!
