Pork and Potato Chip Casserole

Ingredients:

- 2 tablespoons olive oil
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 pound pork, cubed
- 2 cups cooked potatoes, cubed
- 1/2 cup cooked pasta
- 1/2 cup potato chips, crushed
- 1/2 cup oat milk
- 1/2 cup breadcrumbs
- 1/4 cup butter, melted
- 1/4 cup ranch dressing
- 1 cup shredded cheese
- 4 tortillas, cut into strips

Instructions:

1. Preheat oven to 350 degrees F.

2. Heat olive oil in a large skillet over medium heat. Add onion and bell pepper and cook until softened, about 5 minutes.

3. Add pork and cook until browned, about 8 minutes.

4. In a large bowl, combine potatoes, pasta, potato chips, oat milk, breadcrumbs, butter, ranch dressing, and cheese. Mix until combined.

5. Spread the mixture into a 9x13 inch baking dish. Top with tortilla strips.

6. Bake for 25-30 minutes, or until the top is golden brown.

7. Let cool for 10 minutes before serving. Enjoy!
