Pork and Rice Bowl
Ingredients:
-1 lb. pork shoulder
-1 cup uncooked white rice
-1 cup sliced mushrooms
-1 cup green beans
-1 tablespoon olive oil
-Salt and pepper to taste
Instructions:
1. Preheat oven to 350 degrees F.
2. Place pork shoulder in a baking dish and season with salt and pepper. Bake in preheated oven for 30 minutes.
3. Meanwhile, cook rice according to package instructions.
4. Heat olive oil in a large skillet over medium heat. Add mushrooms and green beans and season with salt and pepper. Cook, stirring occasionally, until vegetables are tender, about 5 minutes.
5. To assemble the bowls, divide cooked rice among four bowls. Top each bowl with pork shoulder, mushrooms, and green beans. Serve warm.
