Pork and Rice Pasta
Ingredients:
- 1 lb. pork, cut into cubes
- 2 cups cooked white rice
- 1/2 lb. pasta of your choice
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup white wine
- 1/4 cup chicken broth
- 1/4 cup Parmesan cheese, grated
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions:
1. Preheat oven to 350 degrees F.
2. In a large skillet, heat olive oil over medium-high heat. Add pork cubes and cook until lightly browned, about 5 minutes. Add garlic and cook for 1 minute.
3. Add white wine and chicken broth to the skillet and bring to a boil. Reduce heat to low and simmer for 10 minutes.
4. Meanwhile, cook pasta according to package instructions. Drain and set aside.
5. Add cooked rice to the skillet and stir to combine. Simmer for 5 minutes.
6. Add cooked pasta to the skillet and stir to combine. Simmer for 5 minutes.
7. Transfer the pork and rice pasta mixture to a 9x13 inch baking dish. Sprinkle with Parmesan cheese and parsley.
8. Bake in preheated oven for 20 minutes.
9. Serve hot, with salt and pepper to taste. Enjoy!
