Pork and Rice Salad
Ingredients:
- 2 cups cooked white rice
- 2 cups cooked, cubed pork
- 2 cups shredded cooked chicken
- 2 cups salad greens
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 tablespoons white wine vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions:
1. In a large bowl, combine the cooked rice, pork, chicken, and salad greens.
2. In a small bowl, whisk together the olive oil, lemon juice, white wine vinegar, and Dijon mustard. Season with salt and pepper to taste.
3. Pour the dressing over the salad and toss to combine.
4. Serve the salad chilled or at room temperature. Enjoy!
