Pork and Veggie Noodle Stir-Fry

Ingredients:

-1 lb. pork, cut into small cubes
-1 package of frozen mixed veggies
-1 package of noodles
-2 tablespoons of olive oil
-2 cloves of garlic, minced
-1 teaspoon of ground ginger
-1/2 teaspoon of red pepper flakes
-2 tablespoons of soy sauce
-2 tablespoons of rice vinegar
-Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the pork cubes and cook until they are lightly browned.

3. Add the garlic, ginger, and red pepper flakes and cook for an additional minute.

4. Add the frozen veggies and cook for 5 minutes, stirring occasionally.

5. Meanwhile, cook the noodles according to package instructions.

6. Add the cooked noodles to the skillet and stir to combine.

7. Add the soy sauce and rice vinegar and season with salt and pepper to taste.

8. Cook for an additional 2-3 minutes, stirring occasionally, until everything is heated through.

9. Serve hot. Enjoy!
