Pork Chop Quinoa
Ingredients:
-4 pork chops
-1 cup quinoa
-2 tablespoons olive oil
-1 onion, diced
-1 red bell pepper, diced
-2 cloves garlic, minced
-1 teaspoon dried oregano
-1 teaspoon dried thyme
-1/2 teaspoon smoked paprika
-1/2 teaspoon ground cumin
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-1 cup chicken broth
-1/4 cup white wine
-1/4 cup freshly squeezed lemon juice
Instructions:
1. Preheat oven to 375 degrees F.
2. Heat the olive oil in a large skillet over medium-high heat. Add the pork chops and cook for 3-4 minutes per side, or until golden brown. Transfer to a plate and set aside.
3. Add the onion, bell pepper, garlic, oregano, thyme, smoked paprika, cumin, salt, and pepper to the skillet. Cook for 5 minutes, stirring occasionally, until the vegetables are softened.
4. Add the quinoa, chicken broth, white wine, and lemon juice to the skillet. Stir to combine.
5. Nestle the pork chops into the quinoa mixture. Cover the skillet with a lid and transfer to the preheated oven.
6. Bake for 25 minutes, or until the pork chops are cooked through and the quinoa is tender.
7. Serve the pork chops and quinoa hot. Enjoy!
