Pork Fillet with Tomato, Mozzarella, and Lime Pasta
Ingredients:
- 2 pork fillets
- 2 tomatoes, diced
- 2 cups mozzarella cheese, shredded
- 2 limes, juiced
- 2 cups cooked pasta
Instructions:
1. Preheat oven to 350 degrees F.
2. Place pork fillets in a baking dish and season with salt and pepper.
3. Bake in preheated oven for 25 minutes, or until cooked through.
4. Meanwhile, in a large bowl, combine diced tomatoes, mozzarella cheese, and lime juice.
5. Once pork fillets are cooked through, remove from oven and top with tomato, mozzarella, and lime mixture.
6. Return to oven and bake for an additional 10 minutes, or until cheese is melted and bubbly.
7. Serve pork fillets over cooked pasta. Enjoy!
