Pork Loin and Rice Stew

Ingredients:

-1 lb pork loin, cut into cubes
-2 stalks celery, diced
-1 onion, diced
-1 bell pepper, diced
-2 cups chicken bone broth
-1 cup uncooked white rice
-2 cloves garlic, minced
-Salt and pepper, to taste

Instructions:

1. Heat a large pot over medium-high heat. Add the pork loin cubes and cook until lightly browned, about 5 minutes.

2. Add the celery, onion, bell pepper, and garlic to the pot and cook for another 5 minutes.

3. Pour in the chicken bone broth and bring to a boil.

4. Add the rice, reduce the heat to low, and simmer for 20 minutes, or until the rice is cooked through.

5. Season with salt and pepper to taste.

6. Serve hot. Enjoy!
