Pork Shank Stew
Ingredients:
- 2 lbs pork shank
- 2 tablespoons olive oil
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 tablespoons paprika
- 2 tablespoons white wine vinegar
- 1 (14.5-ounce) can tomato sauce
- 2 cups chicken broth
- 2 bay leaves
- 2 large potatoes, peeled and diced
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large pot over medium-high heat.
2. Add the pork shank and brown on all sides.
3. Add the onion and garlic and cook until softened, about 5 minutes.
4. Add the paprika and white wine vinegar and stir to combine.
5. Add the tomato sauce, chicken broth, bay leaves, and potatoes.
6. Bring the mixture to a boil, then reduce the heat to low and simmer for 1 hour, stirring occasionally.
7. Season with salt and pepper, to taste.
8. Serve hot. Enjoy!
