Potato and Chickpea Bake with Three Cheese Topping
Ingredients:
- 4 potatoes, peeled and sliced
- 1 can chickpeas, drained and rinsed
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tbsp flour
- 1 tsp sugar
- Salt and pepper to taste
- 2 tbsp olive oil
- 50g feta cheese, crumbled
- 50g mozzarella cheese, shredded
- 30g Parmesan cheese, grated
- 1/2 cup milk
- 1 sliced tomato
- 1/2 cucumber, sliced
- 2 tbsp creme fraiche
- 1 tbsp coconut oil
- Juice of 1 lemon
- 2 tbsp sunflower seeds
- 2 tbsp Brazil nuts, chopped
- 2 tbsp cashews, chopped
- 1 tsp mustard
- 1 tbsp balsamic vinegar
- 1 cup rice
- 1 cup couscous
- 1 cup coconut milk
- Fresh herbs for garnish
Instructions:
1. Preheat the oven to 180°C (350°F).
2. In a large bowl, mix together the potatoes, chickpeas, onion, garlic, flour, sugar, salt, pepper, and olive oil until well combined.
3. Transfer the mixture to a baking dish and spread it out evenly.
4. In a separate bowl, mix together the feta, mozzarella, Parmesan, and milk. Pour this cheese mixture over the potato and chickpea mixture.
5. Arrange the sliced tomato and cucumber on top.
6. Bake in the preheated oven for 30-35 minutes, or until the cheese is melted and bubbly.
7. In a small saucepan, heat the creme fraiche, coconut oil, lemon juice, sunflower seeds, Brazil nuts, cashews, mustard, and balsamic vinegar until well combined.
8. Serve the potato and chickpea bake hot, topped with the creamy sauce and garnished with fresh herbs.
