Make Potato and Tomato Frittata

Recipe Name: Potato and Tomato Frittata

Ingredients:
- 2 medium potatoes, peeled and thinly sliced
- 4 eggs
- 1 tomato, diced
- Salt, to taste
- 2 tablespoons oil

Instructions:
1. Heat oil in a non-stick skillet over medium heat.
2. Add the sliced potatoes to the skillet and cook until they are golden brown and tender, stirring occasionally.
3. In a bowl, beat the eggs and season with salt.
4. Pour the beaten eggs over the cooked potatoes in the skillet.
5. Sprinkle the diced tomato over the eggs.
6. Cook the frittata for about 5-7 minutes, or until the edges start to set.
7. Carefully flip the frittata using a plate or lid to cook the other side for another 5-7 minutes, or until fully cooked.
8. Once cooked, slide the frittata onto a serving plate and cut into wedges.
