Potato Pancakes
Ingredients:
- 2 large potatoes
- 1 small onion
- 2 eggs
- 1/4 cup all-purpose flour
- Salt and pepper to taste
- Vegetable oil for frying
Instructions:
1. Peel and grate the potatoes and onion. Place them in a clean kitchen towel and squeeze out as much liquid as possible.
2. In a mixing bowl, combine the grated potatoes and onion with the eggs, flour, salt, and pepper. Mix well to form a batter.
3. Heat a skillet over medium heat and add enough vegetable oil to cover the bottom of the pan.
4. Spoon the potato mixture into the skillet, forming small pancakes. Flatten them with a spatula.
5. Cook the pancakes for about 3-4 minutes on each side, or until they are golden brown and crispy.
6. Remove the pancakes from the skillet and place them on a paper towel to drain any excess oil.
7. Serve the potato pancakes hot with sour cream or applesauce on the side.
