Potato Rice Chilli
Ingredients:
- 500g pre-cooked rice
- 1 large onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of chilli powder
- 2 large potatoes, diced
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the onion and garlic and sauté until the onion is softened and lightly browned.
3. Add the cumin, coriander, and chilli powder and stir to combine.
4. Add the potatoes and stir to coat with the spices.
5. Add the pre-cooked rice and stir to combine.
6. Reduce the heat to low and cover the skillet.
7. Allow the rice and potatoes to cook for 10-15 minutes, stirring occasionally.
8. Taste and adjust the seasoning with salt and pepper.
9. Serve the potato rice chilli hot. Enjoy!
