Garlic Pork and Potato Bake
Ingredients:
- 2 lbs pork tenderloin, cut into cubes
- 4 cloves garlic, minced
- 2 lbs potatoes, cut into cubes
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper, to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. In a large bowl, combine pork cubes, garlic, potatoes, olive oil, oregano, thyme, salt and pepper. Toss to combine.
3. Transfer the mixture to a 9x13 inch baking dish.
4. Bake in preheated oven for 35-40 minutes, or until pork is cooked through and potatoes are tender.
5. Serve hot. Enjoy!
