Cheesy Bacon and Egg Hash

Ingredients:

- 8 slices of bacon
- 2 tablespoons of butter
- 1 onion, diced
- 2 potatoes, peeled and diced
- 4 eggs
- 1/2 cup of shredded cheese
- 1/4 cup of milk
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375 degrees F.

2. In a large skillet over medium heat, cook the bacon until crisp. Remove the bacon and set aside.

3. Add the butter to the skillet and melt. Add the diced onion and potatoes and cook until the potatoes are tender, about 10 minutes.

4. In a medium bowl, whisk together the eggs, cheese, and milk.

5. Pour the egg mixture over the potatoes and onion in the skillet. Crumble the bacon over the top.

6. Bake in the preheated oven for 20 minutes, or until the eggs are set.

7. Sprinkle with salt and pepper to taste. Serve warm. Enjoy!
