Cheesy Potato Frittata
Ingredients:
-3 large potatoes, peeled and diced
-3 tablespoons olive oil
-1/2 cup shredded cheese
-6 eggs
-Salt and pepper to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. Heat the olive oil in a large skillet over medium-high heat. Add the potatoes and cook, stirring occasionally, until they are golden brown and tender, about 10 minutes.
3. In a large bowl, whisk together the eggs, cheese, salt, and pepper.
4. Add the potatoes to the egg mixture and stir to combine.
5. Pour the mixture into a greased 9-inch pie plate.
6. Bake for 25-30 minutes, or until the eggs are set and the top is golden brown.
7. Let cool for 10 minutes before serving. Enjoy!
