Boiled Meat and Vegetable Stew
Ingredients:
- 2 pounds of boiled meat (such as beef, pork, or chicken)
- 4 potatoes, peeled and cubed
- 4 carrots, peeled and sliced
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 teaspoon dried thyme
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
3. Add the potatoes, carrots, and thyme and cook for another 5 minutes.
4. Pour in the beef broth and bring to a simmer.
5. Add the boiled meat and simmer for 15 minutes, or until the vegetables are tender.
6. Season with salt and pepper, to taste.
7. Serve hot. Enjoy!
