Chicken Curry with Potatoes and Carrots
Ingredients:
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon ground ginger
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 pounds boneless, skinless chicken thighs, cut into 1-inch cubes
- 1 cup chicken broth
- 1 can (14.5 ounces) diced tomatoes
- 2 large potatoes, peeled and cut into 1-inch cubes
- 2 large carrots, peeled and cut into 1-inch cubes
Instructions:
1. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
2. Add the curry powder, cumin, coriander, turmeric, ginger, cayenne pepper, salt, and black pepper. Cook, stirring, for 1 minute.
3. Add the chicken and cook until lightly browned, about 5 minutes.
4. Add the chicken broth, tomatoes, potatoes, and carrots. Bring to a simmer and cook until the chicken is cooked through and the vegetables are tender, about 15 minutes.
5. Serve over cooked rice or with warm naan bread. Enjoy!
