Roast Beef with Potatoes and Carrots

Ingredients:

- 2 pounds roast beef
- 2 pounds potatoes, peeled and cut into 1-inch cubes
- 2 pounds carrots, peeled and cut into 1-inch pieces
- 2 tablespoons olive oil
- 2 teaspoons garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1 teaspoon black pepper

Instructions:

1. Preheat oven to 375°F.

2. Place roast beef in a roasting pan.

3. In a large bowl, combine potatoes, carrots, olive oil, garlic powder, oregano, thyme, salt, and pepper. Toss to coat.

4. Spread the potato and carrot mixture around the roast beef in the roasting pan.

5. Roast in preheated oven for 1 hour, or until the roast beef is cooked through and the potatoes and carrots are tender.

6. Serve hot. Enjoy!
