Cheesy Potato Frittata

Ingredients:

- 6 eggs
- 2 potatoes, peeled and diced
- 1/2 cup shredded cheddar cheese
- 1/4 cup milk
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375 degrees F.

2. Heat olive oil in a large oven-safe skillet over medium heat.

3. Add potatoes and cook until softened and lightly browned, about 10 minutes.

4. In a large bowl, whisk together eggs, milk, salt, and pepper.

5. Add potatoes to the egg mixture and stir to combine.

6. Pour egg mixture into the skillet and sprinkle cheese over the top.

7. Cook for 5 minutes, then transfer to the preheated oven.

8. Bake for 15-20 minutes, or until the eggs are set and the cheese is melted and lightly browned.

9. Serve hot. Enjoy!
