Cheesy Scrambled Egg and Potato Hash
Ingredients:
-2 large potatoes, peeled and diced
-3 eggs
-1/2 cup shredded cheese
-1 tablespoon olive oil
-Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the diced potatoes to the skillet and season with salt and pepper. Cook for 8-10 minutes, stirring occasionally, until potatoes are golden and tender.
3. In a small bowl, whisk together the eggs and shredded cheese.
4. Reduce the heat to medium and add the egg mixture to the skillet. Stir to combine with the potatoes.
5. Cook for 5-7 minutes, stirring occasionally, until the eggs are cooked through and the cheese is melted.
