Roasted Chicken and Vegetables
Ingredients:
- 2 pounds of chicken thighs
- 2 large potatoes, cut into 1-inch cubes
- 2 large carrots, cut into 1-inch pieces
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375°F.
2. In a large bowl, combine chicken, potatoes, carrots, olive oil, garlic powder, onion powder, paprika, oregano, salt, and pepper. Toss to combine.
3. Transfer the mixture to a large baking dish.
4. Bake for 40-45 minutes, stirring occasionally, until chicken is cooked through and vegetables are tender.
5. Serve and enjoy!
