Roasted Chicken and Vegetables
Ingredients:
- 2 lbs. chicken thighs
- 2 lbs. potatoes, peeled and cut into 1-inch cubes
- 2 cups carrots, peeled and cut into 1-inch pieces
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. In a large bowl, combine chicken, potatoes, carrots, olive oil, garlic powder, oregano, thyme, salt and pepper. Mix until all ingredients are evenly coated.
3. Spread the mixture onto a large baking sheet.
4. Bake in preheated oven for 45 minutes, or until chicken is cooked through and vegetables are tender.
5. Serve and enjoy!
